Campbell Gardens Tasty Biscuits

1 (16-oz.) can biscuits “Grand” size, 8 count

8 bacon slices, cooked until crisp, crumbled

1/2 cup mayonnaise

1/2 cup Parmesan cheese, shredded

1/4 cup green onion tops, chopped

1/4 cup pecans, chopped

1/4 cup Candied Jalapenos, chopped

Kosher Salt

Cracked Black Pepper

Preheat oven to 375°.  Remove biscuits and pull apart.  Roll each piece into a 6″ round on a floured surface.  Transfer to baking sheets and bake 10 minutes until lightly browned.  Remove from oven.

Combine in a bowl mayonnaise and Parmesan cheese and spread over the tops of biscuits.  Distribute evenly bacon,onions, pecans and jalapenos.  Place back into oven until bubbly, sprinkle salt and black pepper over the top and serve!

Cheesy Long Loaf Sandwich

Cheesy Long Loaf Sandwich

I love dishes that are easy to make and take and this is one of them.  This comes from a good friend of ours who is always sharing his recipes.  We’ve taken this on camp-outs and football and basketball parties.  It’s even is a great sandwich to welcome the new neighbors or a friend in need.  So convenient to put a slice in the skillet and warm up.  

  • 1 lb. Italian sausage, cooked, crumbled & drained
  • 1/2 cup onion, chopped                                         
  • 1/2 cup chopped Candied Jalapeños
  • 1 (4 oz) can mushrooms, sliced & drained
  • 1 (8 oz.) cream cheese, cubed
  • 1/4 cup Parmesan grated cheese
  • 1/4 cup water
  • 1/4 tsp. oregano leaves, crushed
  • 1/4 tsp. garlic salt
  • 1 Italian Loaf
  • 1 (6 oz.) pkg. mozzarella, slices cut in half
Add onions, peppers and mushrooms into skillet and cook until tender.  Add cream cheese, Parmesan, water and seasonings.  Stir over low heat until creamy and cheese is melted.  Add sausage to cheese mixture.  Cut a 1″ top off the bread length wise, scoop out center leaving 1″ shell.  Place 1/2 of mozzarella slices in the shell, fill with meat mixture and top with remaining cheese.  Cover with the top slice of bread.  Place on a foil covered cookie sheet and bake at 400° for 10 minutes and then slice and serve.
When we take this camping or give to someone we would make and wrap in foil tightly, refrigerate. When ready to serve slice into 1-1/2″ slices and place in skillet until toasty. The flavors of the sausage, jalapeños, mushrooms and cheese just keep you coming back for more!

You’ve got to try out this new recipe we came up with last night for dinner! We had it over roasted cauliflower and it was delicious!

Creamy Jalapeño Sauce

2 Tbl.flour
2 Tbl. butter
2 C. 2% milk (really rich you can use cream)
2 Tbl. Candied Jalapeños, chopped
2 slices bacon, cooked and crumbled
salt & pepper to taste

In skillet melt butter, stir in flour and then slowly add milk, when it is smooth and creamy add Candied Jalapeños. Pour sauce over roasted vegetables and then add crumbled bacon over the top!
