Sweet N Spicy Wings

This sweet n spicy sauce will put a good burn in your belly. Be sure to make plenty for your crowd, they will come back for seconds and thirds! Super Bowl Wings

2 large packages of wings, about 10 lbs. cut up into drumettes, wings, and tips

Sauce Ingredients:

  • 1 medium size bottle of Louisiana Hot Sauce
  • 1 medium size jar of your favorite flavor of jelly (I have used grape, orange marmalade, and raspberry)
  • 1 stick of butter
  • 2 cups of brown sugar
  • 1/2 cup of chopped Campbell candied jalapeños or candied habaneros

Dry Rub Ingredients:

  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 2 teaspoons black pepper
  • 1 teaspoon celery salt
  • 1 teaspoon salt
  • 6 tablespoons of cornstarch

Enough cooking oil to deep fry wings


Lay wings on a paper towel and pat dry. Mix the dry rub ingredients in a plastic bag. Add wings to the dry rub bag and coat well. Spread out onto a cookie sheet and refrigerate for 1 hour. Add the sauce ingredients to a pan and turn heat to a low simmer, stirring as needed. After 1-hour of the wings being refrigerated, heat the oil in a deep heavy pan and slowly add the wings, frying until done. Drain on a paper towel. Into a crock pot add the fried wings and pour the sauce over the wings. Making sure all the wings are coated well. Turn the crock pot on low while serving.

Serve with Blue Cheese Dressing and celery sticks.

Marinated Summer Salad

This could be served as a salad or a salsa with chips!  Either way it yells “summer”!

Summer Salad


3 medium cucumbers, peeled and chopped

3 medium tomatoes, chopped

1 medium red onion, chopped

1/2 cup chopped candied jalapeños

2 stalks of celery, cut into 1/4 inch slices

1 ear of fresh corn cut off the cob

1 teaspoon celery salt

1 teaspoon garlic seasoning

1 cup of sugar

1/4 cup of vinegar

1/4 cup of balsamic vinegar

1/4 teaspoon black pepper

1 teaspoon of chopped cilantro


Mix all of the above ingredients together in a large bowl.  Toss well to mix and refrigerate for at least 2 hours before serving.  You can also add zucchini in place of cucumbers.

Green Chili Casserole




1 pound ground beef

1 can red or black beans, drained

1 package taco seasoning

1 small onion, diced

3 cups of corn chips, broken not crushed

1 small can black olives, sliced

2 (25 oz.) cans of whole green chilies, split lengthwise

1 can spicy cheese soup

1/2 cup of milk

2 cups cheddar cheese, shredded


Preheat oven to 350°.  In a skillet add hamburger, beans and taco seasoning, cook until done. Lightly grease and 8 x 11 inch baking dish. Place half of the corn chips on the bottom of baking dish. Layer half of the hamburger, onion, green chilies, black olives, candied jalapenos and shredded cheese.  Repeat layer.  In a medium bowl dilute the soup with the milk and pour over the top of the casserole.  Cover and bake for 30 minutes. Serve with lettuce, sour cream and salsa.

Spicy Pimento Bacon Cheese Spread

Spicy Pimento Bacon Cheese Spread

A grilled pimento cheese sandwich on slabs of crusty bread is a staple at the Campbell’s.  We will fold a dollop into an egg omelet, throw a scoop on top of a hamburger or serve as a dip with gourmet crackers. Just make sure the pimento cheese is cold before putting any fire to it, if it gets too hot, you’ll wind up with a mayonnaise mess.


8 oz.  Cheddar Jack cheese, shredded

1/2 cup mayonnaise, you can substitute cream cheese

1 tablespoonful Dijon mustard

1/4 cup candied jalapeños, diced

1/4 teaspoon salt

1/4 teaspoon pepper

3 slices of bacon, cooked and crumbled

7 oz. jar pimento peppers, drained and chopped 

dash of lemon juice

dash of Worcestershire sauce


Combine the above ingredients in a large bowl. Mix together well. Depending on how you will serve it can be cold or transfer to a microwavable dish and microwave for about 20 seconds or until warm, or put in a baking dish in a pre-heated 350-degree oven for about 15 minutes or until heated through.

Zippy Tuna Wraps


Zippy Tuna Wraps


1 can tuna, drained and flaked

2 tablespoons red and yellow bell peppers, chopped

2 tablespoons candied jalapeños, chopped

2 tablespoons celery, chopped

2 tablespoons green onion, chopped

4 teaspoons Dijon Mustard

2 slices sharp cheddar cheeses, halved

4 large leaf lettuce leaves


Mix tuna, peppers, celery,onion and mustard.  Place 1 cheese slice on each lettuce leaf. Top evenly with tuna mixture.  Fold in both sides of each lettuce leaf; roll up.  Serve immediately or wrap individually in plastic wrap and refrigerate until ready to serve.

Italian Sausage Stuffed Sweet Jalapeños




15 jalapeños, cut in 1/2, seeded and deveined

1/2 cup candied jalapeños, chopped

2 lbs. mild Italian sausage

1/4 cup red onion, minced

1/2 cup red bell pepper, minced

3 tablespoons  garlic, minced

2 cups cream cheese, softened

1/2 cup Parmesan cheese, grated  plus more for garnish

salt and pepper

1/2 cup mozzarella cheese, shredded


Preheat oven to 350° and set rack in the middle of the oven.

Place jalapenos on a sheet tray and roast for 10 minutes. Removed from the oven and let cool. Turn broiler on medium.

In a medium pan add the sausage and cook for 5-7 minutes, breaking up as cooking. Add the onions, red bell and candied jalapeños and garlic and cook to soften for about 5 minutes. Remove and place in a large bowl. Cool to room temperature, then add cream cheese and Parmesan. Mix ingredients thoroughly and season with salt and pepper.  Place approximately 1 tablespoonful of mixture into each jalapeño half, and top with 1/2 teaspoon of mozzarella cheese. Place the sheet tray of stuffed peppers in the oven and broil until mozzarella cheese melts.  

Our sweet jalapenos and Italian sausage add a nice spicy flavor burst to this tasty appetizer.  I have even been know to forget the whole jalapenos and just make up a crock pot dip out of this recipe.  Either way it is yummy!

Baked Brie with Raspberry & Sweet Jalapeños

1 wheel of  Brie

3/4 cup of raspberry Jam

1/2 cup of fresh raspberries

1/4 cup of diced candied jalapeños

1/2 cup of pecans, toasted and chopped


Cut the top rind off of the Brie.  Place Brie in a shallow baking dish. Spoon over the top of the Brie the rest of the ingredients: raspberry jam, fresh raspberries, toasted pecans and candied jalapeños. Place in oven at 350 for 5-7 minutes or until Brie starts to ooze but not melts.  Serve with crackers.

Mexican Crockpot Chicken



1 pkg chicken breast tenderloins

8 oz. pkg cream cheese

1 can Mexican corn, drained

1 can diced tomatoes with green chilies

1 can of red beans, pinto beans or black beans, drained

salt and pepper

1 pkg taco seasoning

1/2 cup chopped, Campbell Gardens Candied jalapeños


Place chicken tenderloins in the bottom of crockpot.

Add, diced tomatoes, Mexican corn, beans, taco seasoning, candied jalapeños, salt and pepper. Place the block of cream cheese on top of it all.  Turn the crockpot to high for 5 hours or low for 8 hours. Shred the chicken and then serve it over rice with sour cream, cilantro, chopped candied jalapeños and diced onion on top.   I have even made up soft tacos instead of using rice, either way it’s delicious and smells so good!  YUMMIEST

Chocolate Covered Candied Jalapeños



Campbell’s Candied Jalapeños, take seeds out

Dark chocolate

White chocolate


Place candied jalapeños in strainer and drain for 5 minutes.  Melt dark chocolate and dip jalapeños, completely cover with chocolate.  Place on wax paper.  Melt white chocolate and drizzle over the top of the jalapeños.  Refrigerate to set.


Sweet Jalapeño Egg Salad



6 hard boiled eggs

1 tablespoon chopped candied jalapeños

1 green onion, finely chopped

1/4 cup diced celery

1 tablespoon mayonnaise

2 tablespoons yellow mustard

1 teaspoon candied jalapeño juice

1/2 teaspoon smoky chipotle seasoning

salt and black pepper


Peel the eggs and roughly chop.  Stir in candied jalapeños, green onion, celery, mayonnaise, mustard, chipotle seasoning and syrup.  Add salt, black pepper to taste.  Serve on rolls or as a dip with corn chips.
